You can feel a healthy challenge to globalisation at Consolación. On the one hand it clamours: Yes! Teruel does exist, and El Matarraña certainly does. Modern design, nestles in a land full of character. On the other hand, there is a firm defence of the hotel’s singular character that, from cubical, glass walled rooms, shows the ancestral rural and urban countryside dotted around the immense woodlands that cover the Puertos de Beceite –Ports de Besseit– and the whole region. Among pine and holm oak clad mountains, the discretely modern building looks good alongside the 16th Century hermitage that is part of the site, reinforcing the twin character. At table –where local flavours abound– Gonzalo’s busy stove allows no rest. Truffles, locally grown vegetables, late peaches, game, tender Aragón lamb, all show that El Matarraña exists and is evolving. After staying at Consolación, there’s no doubt of that.

Cuisine
In Consolación they elaborate the food based on updated local recipes. Meats and home-grown vegetables from the hotels’ garden, Aragón lamb in three textures or new versions of the traditional salted foods of this part of Aragón that overlooks the sea. Around 35 €.
